Marty Friedman - Music for speeding (2002) (his new age period behind him Marty incorporates some j-rock elements, but mostly this instrumental album shows him doing what he does best, heavy metal with fluid lead guitar lines)
Marty Friedman - Loudspeaker (2006) (more like Music For Speeding but with guest appearances from Steve Vai, John Petrucci and Billy Sheehan)
Extreme - III Sides To Every Story (you must know Extreme, and probably this album, but since a couple on the list aren't instrumental releases and you do have one from Nuno Bettencourt, I thought this one was worth mentioning.)

Paul Gilbert - I'm a huge Paul Gilbert fan, so I could write a whole journal entry guide to his releases. If you're into the instrumental stuff Get Out Of My Yard (2006) and Silence Followed By A Deafening Roar are brilliant albums that you will need to get/hear/add to the collection. If you enjoyed the style on King of Clubs any of his other solo releases will be very enjoyable for you, Alligator Farm (2000) perhaps being my favourite of those vocal albums though. Also check out the first two of the Racer X re-union albums: Technical Difficulties (1999) and Superheroes (2000)

Richie Kotzen - richie kotzen (1988?) (Richie's original shred period)
Richie Kotzen - The Inner Galactic Fusion Experience (1995) (A brief return to instrumentals incorporating a lot more jazz/fusion than originally)
Richie Kotzen & Greg Howe - Tilt (1995) (one of two mostly instrumental collaboration albums for the two guitarists, highly virtuosic, but more jazzy/fusiony than their early stuff)
richie kotzen] - Go Faster (2008) (Richie has branched out into some more commercial and bluesy soul type songs, but there's some good shredding to be had, particularly on Fooled Again
Steve Vai - Alien Love Secrets (1995, more of an EP than an album, but one of Vai's best)
Steve Vai - Alive in an Ultra World (2001 - a live concept album of all new material, Vai wrote music for many countries on a world tour, attempting to incorporate their national traditional music into a song each)
Tony Macalpine - Chromaticity (2001)
Tony Macalpine - Collection: The Shrapnel Years (compilation)
Yngwie J. Malmsteen's Rising Force - Perpetual Flame (2008 - better than the majority of Yngwie's stuff because of Ripper Owens)

I think I'm down to just full band albums that also have loads of guitar stuff on them that I haven't mentioned now. (Except for the rest of the discographies for some of the earlier artists I mentioned in the first couple of lists.) I've limited my list to just ones that I've heard and loved though, if I were to name stuff that I know is good, but that I haven't heard I could continue naming more instrumental ones. It should take you several days to listen through all of those though, right?
